Decadent Chocolate Cake with Caramel Filling and Fluffy Peanut Butter Frosting

I’ve had a few texts, emails and comments about the RECIPE FOR THIS CAKE! I am absolutely willing to hand it over because it is was such a hit~ with both adults and kids! It’s so rich that one piece really was enough for me. But, oh…that piece was SCRUMPTIOUS! My daughter’s already requested it for her NEXT birthday (and also any other time I might want to make it before then).

I typically don’t use cake mixes, but if I do, I add enough extra ingredients to not leave a trace of cake box flavor…trust me, it’s delicious. I also wrap a band around my cake pans~ you can buy these at cooking shops or probably even a place like Target. It helps the cake bake evenly…

Delicious Chocolate Cake:

Butter and flour to dust the pans

1 package devil’s food cake mix

3 Tbsp. cocoa powder

1 1/3 c. buttermilk

1/2 c. vegetable oil

3 eggs

1 tsp. vanilla

Preheat the oven to 350ยบ. Grease two 9-inch cake pans and dust with flour.

Mix the cake mix, cocoa, buttermilk, oil and vanilla in a large mixing bowl. Blend thoroughly, stopping to scrape sides with spatula~ about 3 minutes. Divide the batter between the prepared pans and smooth the top with a spatula.

Bake the cake until it is starting to pull away from the sides. 30-35 minutes, depending on how hot your oven bakes. Remove the pan from the oven and cool for 10 minutes. Put cakes right side up on a cooling rack and cool completely, about 30 minutes.

While the cake is cooling, prepare the frosting.

Filling:

1/2 jar of Caramel topping(I used the kind the goes with ice cream)

Fluffy Peanut Butter Frosting:

1 c. creamy peanut butter

1 stick of butter, room temp

2 c. powdered sugar

3 Tbsp. milk

2 tsp. vanilla

Mix peanut butter and butter until fluffy. Add powdered sugar, milk and vanilla. Blend on low for a minute and then increase speed to medium and blend until it’s light and fluffy. You can add a little bit more milk if it seems too heavy.

Pour the caramel carefully over the top of the bottom cake layer, being careful to not let it go over the edges. Put the top cake layer on and spread the addictive frosting on until completely covered!

I Love Food

Last night, we went to an amazing birthday party for our dear friend, Sara Renner. The party was even titled…An Evening in Tuscany…sounds full of promise, doesn’t it. It certainly lived up to my expectations.

It was in a historical home in St. Paul that’s been lovingly redone and it was absolutely gorgeous. I didn’t even pull out my camera, I was so overwhelmed…beautiful. And the gardens…wow.

Sara’s family made the delicious Italian food that they’re famous for and we feasted. It was a party to remember.

Timmy Z, one of our musician friends, brought up an interesting topic about artistic people and food. I hadn’t put the two together quite so clearly. I just thought I liked to be around people who appreciate good food and like to try new things. Most of my friends don’t just eat food, they EAT FOOD and moan and exclaim about what is making that dish so excellent. Not only that, but I’m surrounded by people who can COOK…not just a jar of spaghetti sauce over noodles, but the real quality, fresh ingredients DEAL.

But they’re mostly musicians or writers or drawn to some sort of artistic passion…hmm, I think there’s truth to this.

Our friend, Aaron, who is a professional bass player, even knew the types of bleu cheese he was eating last night. That is a food connoisseur, right there. He’s not even 30 yet, but he knows his food. I remember having him over with a large group years ago, and he noticed every extra touch used to make the food special. He wrote a letter afterward, written as a “food critic”, that was so delightful, it still warms my heart to this day.

It’s really fun to cook for people like that and to eat with people who appreciate what they’re eating. Have you ever noticed the difference? You can cook the same meal for two sets of people. One will eat and at the end say, “That was really good.” They typically ate it quickly and didn’t really look up from their plate.

The other will moan and groan and say, “I LOVE this…the mint is so good in there…did you put X, Y, Z in there?…” They will sincerely feel that their life was made better by eating that particular meal. Not only that, but they’ll remember those dishes from years to come, what was special about them, where they got it and how it compares to other similar dishes.

Another gift, in my opinion.

Now that I’m really thinking about it, anyone I’ve ever had that experience with does fit some artistic profile. Hmm. Don’t really have anywhere to go with this, it’s just interesting to me. What are your thoughts?

Sweetness

I’ve decided I’d like to give eggnog another try, you know…as an adult.

It’s always sort of grossed me out. The thickness, the sweetness, the way people who drink it have that layer of white on their tongues…

You know what, maybe I’m not ready yet.

But if I WAS ready…does anyone have a wonderful eggnog recipe to share? I know of one friend who is in the process of getting a fabulous recipe. How about we compare? Or is there some store-bought brand that you just HAVE TO HAVE every Christmas?

Enquiring minds want to know.

Another cooking question…

7-Minute Frosting, Which Should Really Be Called 10-Minute Frosting is SO delicious…the first day. Is there a technique to keep it from getting granule-y the second day?

Does anyone besides my dad like fruitcake?

These are the questions that plague my mind this morning.

That and…have you ever tried one of those tongue scrapers? Those should really be sold alongside eggnog.
